Mediterranean waffle fast and easy.

What do you think if I say Belgium? Some people think on a beer, chocolate for someone else, almost everyone thinks on Hercule Poirot, and we have waffles. The real waffles, the best street food that ever existed.

Waffle, of course, there are many, even in Belgium, and not only because they are called gaufre, wafel, and waffel, this is only due to the differences in Flemish and Walloon names, but also because of the pasta, shape, and flavor. No wonder, because the history of waffles goes back a very long time: it was time to change, evolve in many directions and evolve.

Ingredients for Mediterranean waffle:

3 cups of flour (2 cups of rye flour and 1 cup of buckwheat and spelt),

half a cup of roasted sesame
just under half a teaspoon of baking soda
lemon juice

3 eggs
a teaspoon of salt, black pepper
two tablespoons of oil (olive, grape seed oil)
Sparkling water in an amount to obtain a density a little denser.

a couple of pieces of dried tomato (finely chopped)

Spoonful source cream, cottage cheese, whatever you have.

Preparing:

Now prep your batter by mixing the water, lemon juice and oil in a bowl.  Combine the flour, sesame, baking soda, salt and pepper in another bowl.  Gently combine the dry ingredients into the wet ingredients and stir until just moistened.

Toss everything together until combined.

Preheat the waffle iron to medium and the oven to its lowest setting. Coat the waffle iron with nonstick spray or brush it with a neutral oil.

Now just drop about 2-3 tablespoons into your waffle maker and let it cook 3-5 minutes until it is cooked through.

Repeat until you have made all of your waffles (mine made 5) Place rounded tablespoons of the batter on the waffle iron, leaving room for the fritters to spread slightly. Close the lid and cook until lightly browned about 3-5 minutes. (You may need to turn your waffle iron up or down slightly, depending on how powerful it is.)

Transfer finished fritters to the oven to keep warm while you cook the remaining fritters.
