Eggplant with ham and cheese

A tasty way to enjoy the eggplant: full of vitamins and potassium, to lick your fingers!

From the grilled, hot, baked, as an attachment or the main course, this purple vegetables is for good reason a part of many national cuisines. This purple vegetable belongs to very nutritious foods because it is rich in vitamins B groups, of which are the most common vitamin B1, B3, B6, and Foles. Also, phytonutrients that have antioxidant, anticancerous and anti-inflammatory properties.

Eggplant is an excellent source of potassium, which together with sodium regulates the amount of fluid in the body and improves the heart’s work. Contains magnesium, manganese, and copper.

Also, the eggplant contains bioflavonoids that improve the operation of vitamin C.

Another advantage is a low level of calories and fats, so take advantage of the eggplant season and enjoy the taste of top flavor, where this healthy vegetable is the star!

Eggplant with ham and cheese

Ingredients:

Eggplant

Ham

Cheese

Salt, pepper

Olive oil

Garlic

Thoroughly wash the eggplant, trim off the green and wipe dry. You don’t have to peel it.Eggplant with ham and cheese Cut it in half and chop it lengthwise. As shown in the picture. To salt and leave half an hour to flush the water and the potential bitterness. With paper towel absorb the liquid released by the eggplant. Prepare garlic sauce: three cloves of garlic and five tbsp of olive oil. Season with salt and pepper. Sprinkle eggplants with garlic sauce.

Insert thin slices of ham and cheese into the cuts. I used homemade ham, it has a much better taste. If you are in restriction you can use mozzarella instead of cheese.  Put sliced tomatoes on top and salt it a little. Cover with aluminum foil and bake about 30 to 40 minutes. Remove the foil and sprinkle eggplants with grated cheese. Bake it for more ten minutes or until cheese is melt.

Eggplant skin is completely edible. It’s a personal preference, just like zucchini. You can peel the skin off or leave it.
